COOKING PAV BHAJI WITH MY INDIAN MOTHER IN LAW | Indian Street Food Recipe

This recipe is something that we absolutely love but have never tried to make before! So here it goes, Moneys mum has now shown us how to make this, so we can finally make it on our own! This honestly tastes so good, it's definitely like being back home! The recipe is listed below:
THE RECIPE:
Ingredients:
1x capsicum
3x potatoes
2x red onions
3x small tomatoes
Butter
Peas
Lemon juice
1x bunch of corriander
Handful of ginger
Garlic paste
Kasuri Methi
Red food colouring (optional)
Red chilli powder
Salt
Pepper
Bread Rolls
Pav Bhaji spice mix
2 green chillis
Directions:
Firstly, boil and mash potatoes, and boil peas and set these both aside for later. Next, cut up all vegetables to be very small and keep all separately, during this, also cut up and grind ginger to create a paste from this. Then, heat up a frying pan with no oil/butter, and add in diced capsicums and chillis and fry these to dry them out. Once these have roasted a little, add in your boiled peas and stir. Next, add in the potatoes, chopped tomatoes, kasuri methi, 2 tablespoons of salt, and stir well until ingredients are combined, and leave roasting for about 3-5 minutes. Next, add in 2 tablespoons of butter, your garlic paste, and ginger that has been grinded, 1 tablespoon of pav bhaji masala, and about 1 teaspoon of red chilli powder, and stir well. Once this has all been combined together, mash it all together with a masher until it is to a smooth consistency. Do not add in water at this point, as the mixture should be dry. Once this has been mashed, take mixture out of pan and set aside for later. In the same pan, heat up 2 tablespoons of butter and some oil. Once this has melted together, add in onions, chopped coriander, a pinch of kasuri methi, a pinch of red food colouring (optional), and 1 and a half tablespoons of pav bhaji masala, 1 tablespoon of salt, and stir well. Cook this for around 3-5 minutes or until onions are sauteed/translucent. Next, add in around 1 tablespoon of lemon juice, and the potato mix that you had previously cooked and set aside, and stir into tarka well. Next, add as much water as you would like to this mixture to get your perfect consistency, and let simmer for around 3-5 minutes to cook well, and serve.
Next cut all the buns in the middle, heat up some butter, kasuri methi, and pav bhaji masala in a pan, and fry off the buns for around 20 seconds on each side, enough to seal in the flavour and brown, and then serve with your pav bhaji.
