<br>Lucenas Best Filipino Empanada Recipe:
<br>
<br>Filling Ingredients:
<br>
<br>1 cup carrot diced
<br>1 cup potato diced
<br>1 cup sweet peas (frozen)
<br>1 cup golden raisins
<br>1/2 cup onion diced
<br>2 garlic cloves minced or garlic powder
<br>2 TBS soy sauce
<br>2 TBS brown sugar
<br>2 Lbs lean ground pork
<br>Salt and Pepper to taste
<br>
<br>Brown the pork until golden brown. Saute the garlic and onion and cook along with the pork for a few minutes. Add the veggies, soy sauce and sugar. Heat through stirring often until all veggies are tender but not overcooked. Let cool while making the dough.

<br>Empanada Dough Ingredients:
<br>
<br>3 cups Bisquick
<br>3 cups all purpose flour
<br>1/2 cup sugar
<br>2 stick butter at room temperature
<br>1 cup very cold water
<br>1 Tsp salt
<br>1 egg white for sealing
<br>
<br>Empanada Dough Recipe:
<br>
<br>Sift together the Bisquick, all-purpose flour, sugar and salt. Mix softened butter and flour mixture with fork to get a crumbly texture. Do Not overwork. Add cold water slowly, try to keep as crumbly as possible. The whole thing should finish into a crumbly ball mixture.

<br>Assembling the Empanada:
<br>
<br>Roll dough to thickness desired and shape (like a pie crust thickness). Use the top part of a glass to make circular shapes
<br>This dough should make about 30-40 small size empanada doughs.
<br> Lightly brush edges of circular dough with egg white wash. Fill each circular dough with about 1 heaping TBS of fillings. Fold in half. press down on edge with fingers and also with fork to create a tight seal. Repeat process until all dough has been used. At this point you can freeze, deep fry or bake the empanadas. If baking brush with egg yolk wash for shiny empanadas.
