1 tsp salt
1/2 cup sugar
1/4 cup maple syrup
1/3 cup unsalted butter (melted) + more for brushing on top/greasing pan
1 can coconut milk (13.5 oz)
4 eggs
1/4 cup shredded mozzarella cheese
1 tsp vanilla extract
1 tsp lemon zest
parchment paper
1 cup mild cheddar cheese
1/2 cup grated coconut for topping (optional)

OPTIONAL STEP: brush topping with more butter after adding cheddar cheese for a browner top
