Bibingka Malagkit Kakanin Recipe - all time favourite (2019)

This is our favorite kakanin (Philippine Rice Cake) for all time, there is no visit to the homeland without this. My brothers and I always order this to our local magbibingka each time we come home. I have duplicated it several times with success, and now, I am sharing it with you from Vienna. This is our cuisine, my barrio's heritage, be proud!!!

INGREDIENTS:

FOR THE BIKO:
2 cups malagkit (glutinous rice or sweet sticky rice)
2 1/2 cups coconut cream or thick coconut milk
1 1/2 cups water
1 cup brown sugar

FOR THE TOPPING:
1 1/2 cups coconut milk (canned is also good)
1 cup brown sugar
