Behold mga Bisdak! I have finally met my goal of making Perfect Bibingka like Dalaguete that I’ve been craving for a long time. One of the reasons why I am longing to go home in my hometown Dalaguete and stop by in Lungsod (sa eskena) to buy a bunch of bibingkang pinaliki 😂.

Ingredients
2 1/4 cups rice flour
2 cans coconut milk
1 cup granulated sugar
1 cup cooked rice, put in a blender with 2/3 cup of coconut milk
1 Tablespoon baking powder
1 tsp yeast
1/4 cup warm water
1 tsp pure vanilla extract (optional)
1 tsp coconut oil or any cooking oil
Wilted banana leaf, cut in circles
( All in all I used 2 cans of coconut milk)

For Latik or toppings:
Remaining coconut milk from batter
1/2 cup brown sugar
1/2 tsp vanilla extract (optional)
