Cathedral Window Chocolate Cake

Cake ingredients:

1 1/2 cups all purpose flour
1/4 tsp salt
1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp instant coffee powder
1 1/2 cups white sugar
3/4 cup cocoa powder
3/4 cup powdered milk
2 eggs, small
1/2 tbsp white vinegar
1/2 tbsp vanilla extract
6 tbsp vegetable oil
1 1/2 cups hot water

Cathedral Window:

1 cup fruit cocktail
1/4 cup green gulaman
8 pcs. cherry
1/2 cup white sugar
410ml kremdensada
1 1/4 cups evaporated milk
1/2 cup pineapple juice
1 cup water
5 tbsp gelatin, clear and unflavored

Cake Procedure:

1) Bring 1 liter of water to a boil
2) Combine all purpose flour, salt, baking powder, baking soda, coffee, white sugar, powdered milk and cocoa powder. Mix well
3) In a separate bowl combine eggs, vegetable oil, white vinegar and vanilla extract. Mix well
4) Combine wet and dry ingredients
5) Add 1/2 cup hot water and mix well. Add the remaining hot water. Mix well
6) Pour cake batter into the pan. *Use springform pan(cover the bottom of the pan with foil)
7) Tap few times to release air bubbles
8) Steam over med. low heat for 25-30 min.
9) Cool cake completely
10)Remove cake dome

Cathedral window procedure:

1) Bring 1 cup water to a boil
2) Add kremdensada, evaporated milk, white sugar and pineapple juice
3) Bring to a boil
4) Gradually add gelatin while stirring
5) Turn the heat off

Assemble:

1) Pour gelatin mixture to lock the cake crumbs
2) Chill/freeze until gelatin sets up
3) Pour gelatin mixture over the cake
4) Add fruit cocktail and green gulaman
5) Add cherries
6) Chill overnight
7) Release belt pan and enjoy !
