Hi, kamusta? Welcome to Pinay in the Kitchen. Today, we're gonna make Bibingka.


1 cup rice flour
1/4 teaspoon salt
2 1/2 teaspoons baking powder
3 tablespoons butter
1 cup granulated sugar
1 1/2 cup coconut milk
1/4 cup shredded coconut
1 sliced salted duck egg
1/2 cup shredded cheddar cheese
3 pieces raw eggs
Pre-cut banana leaf


1. First, we start with preheating the oven to 375F.
2. Next, combine rice flour, salt and baking powder in a bowl.
3. In another bowl, melt the butter in the microwave for 1 minute, then gradually mix in the sugar while whisking.
4. Add the eggs and continue mixing well.
5. Gradually add in the rice flour mixture and continue whisking.
6. Then pour in the coconut milk and keep whisking until the batter becomes smooth.
7. Mix in the grated coconut.
8. Pour in the batter on a baking pan lined with banana leaves. Please be sure to wash the banana leaves with warm water to make sure sure it's sterilized.
9. Top with sliced salted eggs and shredded cheddar cheese.
10. Bake for 35 minutes.
11. Once the bibingka is ready to serve, you can brush it with melted butter on top for added flavor.
