BIBINGKA (Glutinous Rice Flour)

Ingredients:
- 6 cups glutinous rice flour
- 4 1/2 cups or 250g powdered coconut milk
- 3 cups sugar
- 2 cups evaporated milk
- 6 pcs egg, lightly beaten
- grated cheddar cheese
- margarine/butter
- 3 cups water

Instructions:
- In a bowl combine together glutinous rice flour, sugar and powdered coconut milk.
- Add water, milk and egg. Mix well until free of even in consistency.
- Grease baking pan with margarine then pour mixture
- Bake in 190C - 200 preheated oven for 15 minutes
- Remove from oven and Sprinkle top with grated cheese and bake for 15 minutes.
- Remove from oven and Brush top generously with margarine then bake for another 10 to 15 more minutes
- After baking, brush top generously with margarine for the last time then let it cool down before serving.
