HOW TO MAKE Kutsinta no LYE WATER
Kutsinta without LYE WATER is a better way of making KUTSINTA as putting lye water on food can cause burning if used excessively.
Making this Filipino delicacy is plain and simple, just mix the ingredients, steam, sprinkle or dip it on freshly grated coconut and that's it! It can be enjoyed by everyone whom it was cooked for!
You can usually see this as a street food sold near transport stations or MRT's in the Philippines where foot traffic is plentiful and a "Manang or Manong" are selling it.
In the provinces a "Manong" will carry it with a bamboo pole hanged on his shoulder and shouting "Puto", "Kutsinta". Fans of the food will either bring their plates and buy from him or it is put in a plastic bag, sprinkled with the grated coconut! YUM...
If you no longer live in the Philippines or it is no longer the norm then this recipe is perfect for you. Just a warning though the old fashioned uses lye water and we previously did that if you prefer doing that.
Ingredients
1 1/2 cups flour
1 cup tapioca starch
3/4 cup brown sugar
1 1/2 tsp annatto powder + 1/2 cup water
1 cup grated coconut
