How to Make Royal Bibingka (Glutinous Rice Cake)
Ingredients:
1 bag (16 oz) of glutinous rice flour
2 cups brown sugar
1 cup milk
1 can coconut cream
4 eggs
1/2 cup grated cheese
1-2 tbsp butter

-Mix dry ingredients before adding liquid ingredients
-Use a hand mixer to mix it well
-Pass it through a strainer to avoid lumps and for finer texture
-Grease the muffin pan with oil or melted butter
-Fill it with 2/3- 3/4 of the batter
-Preheat oven at 300F and bake for 10 minutes (You may notice them bulging but nothing to worry, they will shrink when you take them out of the oven)
-After 10 minutes, remove from the oven and brush top with melted butter
-Sprinkle some sugar, then add grated cheese
-Bake for another 10 minutes or until the cheese turned brownish
-Take them out from the oven, and brush them again with melted butter.
-Let it cool before serving.
