How to make ROYAL BIBINGKA//VIGAN ILOCOS//Homemade
ROYAL BIBINGKA (VIGAN)
Ingredients:
- 250g or 2 1/2 cups glutinous rice flour
- 200 ml coconut milk
- 1 small can condensed milk
- 205 ml evap milk
- 5 tbsp melted butter or more
- 3 eggs, beaten slightly
- 1/2 ro 1 cup white sugar (can adjust according to your taste)
- grated cheese for toppings
PROCEDURE:
- Pre-heat oven to 180 degrees C
- Mix glutinous flour, sugar, coconut milk, evap and condensed milk. Mix well
- Add melted butter and mix
- Add in eggs and mix well until no lumps
- Strain flour mixture in another bowl
- Grease muffin pan or muffin cups with cooking spray or can brush with the melted butter
- Put mixture in muffin pan, put 3/4 full of the muffin pan or cups (i used 1/4 measuring cup)
- Bake for 10 minutes. After 10 minutes remove from oven and brush with the melted butter and put cheese
- Put back in the oven and bake again for another 5 minutes
- Let it cool down before removing from the pan
- Serve and enjoy
NOTE:
- I make 18 pieces. If for business, you can use any packaging you desire
