Kutsinta
Ingredients:
1 cup all purpose flour
1 cup brown sugar
1 tsp lye water (lihia)
1 tbsp annatto seeds
2-3 tbsp powdered milk(optional)
2 cups water
Toppings:
grated cheese or grated coconut meat
Procedure:
1) Lightly grease molders
2) Soak annatto seeds with 2 tbsp of hot water. Set aside
3) Bring water (1 liter) to a boil
4) In a bowl combine all purpose flour, brown sugar and powdered milk
5) Add water and mix well
6) Add lye water and annatto water. mix well
7) Strain the mixture
8) Pour batter into the prepared molders
9) Steam for 15-20 min. over medium heat. *do not forget to wrap the lid with clean cloth to avoid water from dripping into the kutsinta
10)Cool compeletely before unmolding
11)Top with grated cheese or grated coconut meat
