Kutsinta Without Lye Water I Kutsinta Na Walang Lihia
Kutsinta or Cuchinta is a favorite merienda or snack here in the philippines. I’m making kutsinta without using lye water or lihia because I’m having a hard time finding it and I found out that using too much of it or if you don’t know the right amount to be use, can actually cause corrosive burns on esophagus and stomach.
So I’m making kutsinta using cassava flour to achieve the consistency like that of kutsinta or cuchinta that is made using lye water.

Kutsinta Without Lye Water Recipe
Ingredients
1 cup cassava powder
1 cup all-purpose flour
¾ or 1 cup brown sugar
1 tsp annatto powder (dilute in ½ cup warm water)
2 cup water
Grated coconut or grated cheese (for toppings)
Cooking oil or melted butter (for greasing the mold)
Procedure
1. Grease mold with cooking oil or melted butter so it would be easy to unmold kutsinta later.
2. In a mixing bowl combine together cassava powder, all-purpose flour and brown sugar. Mix well.
3. Make a well in the center. Add water and diluted annatto powder. Mix until well combined.
4. Pour mixture into the mold about ¾ full. Transfer to the steamer.
5. Cover steamer with lid wrap in cheese cloth to avoid water dripping to the kutchinta.
6. Steam for 12-15 minutes over medium heat or until toothpick inserted comes out clean.
7. Remove kutsinta from the steam and let it cool before removing from the mold.
8. Serve with grated coconut or grated cheese on top.
Yields: 20 pcs kutsinta/Cuchinta (depends on size of the mold)
