No Bake Yema Filled Cupcakes | How to make no bake yema filled cupcakes (easy cupcakes)
Cupcake ingredients:
2 cups all purpose flour
1 cup white sugar
2 tsp baking powder
1 tsp salt
4 tbsp powdered milk
8 egg yolks
1/2 cup water
1/2 cup vegetable oil
1 tbsp vanilla extract
Meringue:
8 egg whites
1 cup white sugar
1 tsp white vinegar
Yema filling:
390g condensed milk
410ml evaporated milk
4 egg yolks
1 tbsp vanilla extract
2 tbsp butter/margarine
1 tbsp cornstarch
Frosting:
2 cups whip cream powder
1 cup cold water
Topping:
165g grated cheese
Cupcake procedure:
1) Bring water to a boil
2) Combine all purpose flour, white sugar, powdered milk, salt and baking powder
3) In a separate bowl combine egg yolks, water, vegetable oil and vanilla extract
4) Combine dry and wet ingredients
5) Meringue: Beat egg whites until foamy. Add white vinegar and beat until soft peaks form
6) Gradually add white sugar and beat until stiff peaks form
7) Fold meringue into the cake batter
8) Divide cake batter into 40 equal parts
9) Cover and steam for 15 min. over med low heat
10)Cool cupcakes completely
Yema Filling procedure:
1) Combine evaporated milk, cornstarch, condensed milk, egg yolks, and vanilla extract
2) Cook over med. low heat
3) Add butter and mix well
4) Set aside and cool completely
Whipped cream frosting:
1) Combine whip cream powder and cold water
2) Whip on high speed until it turns into a frosting
Assemble:
1) Make a hole in the center of the cupcakes
2) Pour yema filling into the hole
3) Frost the cupcakes
4) Top with grated cheese
