Homemade Rice Cake (Biko)
Ingredients:
For the rice cake:
2 cups malagkit (glutinous rice)
1.5 cups light brown sugar
2 cups coconut milk
2 pcs pandan leaves
1 cup water
For the topping:
3 cups coconut cream
2 cups light brown sugar
Instructions to cook the topping:
1. Combine sugar and coconut cream in a pan, light to medium heat.
2. Stir continuously until pudding consistency. Set aside.
Instructions to prepare the rice cake:
1. Wash the rice, drain, set aside for 15 mins.
2. Pour water, coconut milk, and rice together, keep stirring until rice is almost cooked, which usually takes about 10-15 mins.
3. Add the sugar. Preheat oven to 350 F for 10 mins.
4. Line rectangular pan with banana leaves or butter if not available.
5. Transfer rice cake to pan, spread evenly.

7. Bake at 350 for 30 mins.
8. Broil for 3-5 mins up to desired topping appearance. Do not leave the oven as baking time varies.
