Since im craving for this famous kakanin from Ilocos Province (my province), I decided to make another post of Royal Bibingka with better video quality.
INGREDIENTS: BATTER
2 cups glutinous flour
200 ml sugar
Pinch of salt
1 cup coconut milk
1/2 cup fresh milk
5 egg yolks
TOPPINGS:
1/4 cup melted Butter / margarine
1 tsp sugar
Grated cheese
1. In a bowl, combine all batter ingredients. Mix thoroughly
Until well blended, smooth and runny mixture.
2. Brush butter into your mould. Pour batter and cover with aluminum foil.
3.In a preheated oven, Bake for 20 minutes over 180 degrees.
4. After 20 minutes, sprinkle sugar on top and add grated cheese. Cover. Bake for another 30 minutes.
5. Remove cover, gently brush butter and bake for 10 minutes.
6. turn off the oven and let the bibingka set in the oven for 15 minutes.
READY TO SERVE
ADJUST BAKING TIME IF YOU WANTED TO BROWN YOUR CHEESE TOPPINGS.
