Ube Biko | How to make Ube Biko | Kakanin (Pinoy Food)
Biko ingredients:
2 cups glutinous rice (malagkit)
1 1/4 cup gata, 2nd piga (coconut milk)
Ube mixture:
2-3 cups ube, cooked (purple yam)
2 cups gata, 1st piga (coconut milk)
1/4 cup gata, 2nd piga (coconut milk)
1 cup white sugar
2 tbsp condensed milk
1/2 cup powdered milk
2 tbsp butter/margarine
pinch of salt
1/2 tbsp Ube flavor
1/2 tbsp violet food color
Ube Syrup ingredients: (optional)
1/4 cup Ube halaya
1/2 cup gata, 1st piga (coconut milk)
1 tsp ube flavor
1 tbsp white sugar
Toppings:
grated cheese
Procedure:
1) Wash glutinous rice twice
2) Add 1 1/4 cup gata(2nd piga)
3) Cook rice for 15-20 minutes or until ready. Set aside
4) Combine butter, condensed milk, 1/4 cup gata(2nd piga), powdered milk and ube
5) Mix and mash the ube
6) Continue stirring until thickened
7) Add coconut milk(1st piga), salt, ube flavor, violet food color and sugar
8) Stir continuously until slightly thickened
9) Add cooked glutinous rice and mix well
10)Continue cooking until thickened. Stir continuously
11)Transfer ube biko into the lightly greased container
12)Smooth out the surface
13)Set aside and let it cool
Ube Syrup procedure:
1) Combine 1/2 cup coconut milk(1st piga), ube halaya, ube flavor and sugar
2) Stir until slightly thickened over low heat
3) Set aside and let it cool
Assemble:
1) Spread ube syrup unto the ube biko
2) top with grated cheese
