Steam Rice Cake with Leche Flan I Steam Rice Cake Flan Recipe

Ingredients

LECHE FLAN MIXTURE
¾ cup condensed milk
4 egg yolks
2 tsp calamansi juice
CAKE MIXTURE
1 cup cake flour
4 egg whites
1 tbsp baking powder
½ cup sugar
1 tbsp melted butter
¼ cup evaporated milk
¼ cup water
1 tsp vanilla
Extra melted butter for greasing mold

Procedure
1. Greased mold with melted butter, so the steamed cake with leche flan will be easy to removed later.
2. In a bowl mix together egg yolks, condensed milk and calamansi juice. Mix well.
3. In another mixing bowl combine cake flour, baking powder and sugar. Mix well.
4. Make a well in the center of the dry ingredients and add egg whites, evaporated milk, water, melted butter and vanilla. Mix well until there’s no lump.
5. Pour leche flan mixture on a greased mold about 1/3 full. Put into the steamer. Cover with lid wrap in cheese cloth to avoid water dripping to the leche flan. Steam for 10 minutes over low heat or until the leche flan has set but not fully cook yet.
6. Remove mold from the steamer using tongs. Pour cake mixture on top of leche flan, don’t full the mold leave a little bit of space for it to rise. Put again to the steamer and steam for 10 minutes over low heat or until toothpick inserted comes out clean. Remove from the steamer and let it cool before removing from the mold.

Yields: 15 pcs (depends on the size of the mold)
